3 lbs fresh sweet potatoes (4–5 large sweet potatoes), peeled and cut into 1 inch cubes
1/2 cup (120ml) milk
1 cup (225g) packed light brown sugar
1/4 cup (56g) unsalted butter, melted
2 eggs
